Steel Cut Oats

Based on Cooks Illustrated

  • 1 1/2 cups water 
  • 1/2 cup steel-cut oats 
  • 1/2 cup milk or water
  1. COMBINE in a small saucepan: water, steel-cut oats, and salt in a small saucepan. Bring the mixture to a boil, cover, remove from heat and set aside overnight.
  2. THE NEXT DAY, stir in the milk and bring the mixture to a boil over medium-high heat. Then lower the heat to medium and cook for 4-6 minutes until it has the consistency of thick pudding. Stir occasionally and monitor to make sure that the milk/water doesn’t boil over.
  3. REMOVE from heat and rest for 5 minutes. Stir and serve with nuts or nut butter, coconut or fresh or dried fruit.
