Purchase ground beef in bulk & brown it in the oven
- Press the beef into a large pan with at least 2 inch sides.
- Dissolve 1/4 teaspoon of soda in a bit of water for each pound of beef. This tenderizes the beef.
- Sprinkle the meat with some salt and pepper and the dissolved soda mixture.
- Gently mix the meat to combine the seasonings and baking soda.
- Make deep depressions the meat with fingers to create air pockets so the meat cooks more evenly.
- Bake, covered in foil, at 350° until the meat reaches 160°.
- Cool in the pan a bit then crumble the meat and drain well.
- Cool to room temperature. Scoop 2 cups of burger (about 10 ounces) into sandwich bags flatten and seal to remove air.
- Store the sandwich bags in a gallon ziplock bag and freeze.
- When ready to use, break up the meat with a meat pounder.
