Rice Pudding

Left-over brown jasmine, or any other variety of rice, makes this comforting dish a snap to put together.
  • 2 cups milk
  • 2 cups cooked rice
  • 2 eggs slightly beaten
  • 1 cup raisins
  • ½ cup sugar
  • 2 teaspoons vanilla
  • Sprinkle of nutmeg and cinnamon
  • A few shavings of butter
  1. PREHEAT oven to 350°.
  2. MICROWAVE the milk for 2 minutes in a medium size bowl or measuring cup.
  3. MIX the rice, eggs, raisins, sugar, and vanilla into the warm milk.  
  4. POUR into a sprayed 7×11(pictured) or a 9×13 pan.
  5. ADD bits of cold butter then sprinkle with nutmeg and cinnamon. 
  6. BAKE for 40 minutes, or until the filling is mostly set.
