Left-over brown jasmine, or any other variety of rice, makes this comforting dish a snap to put together.
- 2 cups milk
- 2 cups cooked rice
- 2 eggs slightly beaten
- 1 cup raisins
- ½ cup sugar
- 2 teaspoons vanilla
- Sprinkle of nutmeg and cinnamon
- A few shavings of butter
- PREHEAT oven to 350°.
- MICROWAVE the milk for 2 minutes in a medium size bowl or measuring cup.
- MIX the rice, eggs, raisins, sugar, and vanilla into the warm milk.
- POUR into a sprayed 7×11(pictured) or a 9×13 pan.
- ADD bits of cold butter then sprinkle with nutmeg and cinnamon.
- BAKE for 40 minutes, or until the filling is mostly set.
