Mexican Shredded Pork with Beans

  • 1- 28 ounce can of tomatoes
  • 3 carrots, ends trimmed but no peeling necessary
  • 2 ribs of celery, top leaves included
  • 2 cans green chilies
  • 2 Tablespoons chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons cumin
  • ¼  teaspoon oregano
  • 4 cups cooked, shredded pork
  • 1 can chili beans with sauce
  • 1 can black beans
  • 1 can kidney beans
  1. PUREE first 8 ingredients in food processor. Transfer to a large bowl.
  2. ADD the pork and the beans. 
  3. MIX together and crock-pot for about 3 hours.
  4. SERVE in a warm tortilla, with chips, or as the meat base for a taco type salad.
