Easy and delicious . Enjoy them in a tortilla shell, on a salad or by themselves.
1 cup lentils
2 and 1/4 cups water
1 red bell pepper, finely diced
1 (14.5 oz can) petite- diced tomatoes
1 Tablespoon chili powder
1teaspoon onion powder
1 teaspoon cumin
3/4 teaspoon salt
Dash of oregano
1/2 Tablespoon vegetable oil
1 can black beans, rinsed and drained
STIR all the ingredients together (except for the beans) in a rice cooker.
COOK using the white rice option–about 20-25 minutes. Or bring the mixture to a simmer in a covered pan on the stove for 15 to 20 minutes. Add more water if the mixture becomes too dry.
