Delicious Spreadable Butter

Want a smear of butter right out of the fridge without tearing your bread? Extra-light tasting oil olive doesn’t change the taste of the butter at all! As a bonus, the monounsaturated fat in the olive oil makes this butter blend healthier than butter alone. You decide the quantity–make as little or as much as you want.

  • 2 cups butter (4 cubes)
  • 2 cups extra light tasting olive oil
  1. SOFTEN the butter, either at room temperature or carefully in the microwave.
  2. PLACE butter in a mixing bowl (stand mixer, regular deep bowl or large glass measuring cup)
  3. USE a stand mixer or electric beaters, to slowly mix the butter, adding speed as it softens.
  4. SCRAPE the butter from the sides and bottom of the bowl and move it toward the center.
  5. BEAT the butter for a few minutes until there are no lumps.
  6. REDUCE the mixing speed and pour a stream of olive oil into the butter.
  7. INCREASE the mixing speed.
  8. STOP the mixer and scrape down the sides and bottom of the bowl. Re-scrape as necessary. Mix well after scraping.
  9. ONCE the mixture is smooth, pour it into lidded container(s).
  10. STORE in the refrigerator. Butter will be soft and ready-to-spread.

Pour the butter mixture into preferred containers. Well-wrapped, tightly covered containers will store for a few months in the fridge.
