- 1 cup buttermilk (use 1 cup of water if using buttermilk powder)*
- 1/3 cup oil
- 2 eggs
- 1-3/4 cups cornmeal
- 3/4 teaspoon salt
- 1/2 teaspoon soda
- 1/4 cup sugar
- 1/3 cup flour
- *4 Tablespoons buttermilk powder
- Part of a stick of cold butter to flavor the pan
- HEAT a griddle or non-stick pan.
- COMBINE the water or buttermilk, oil and eggs in a small bowl. In a larger bowl combine the remaining ingredients.
- ADD the wet ingredients to the dry ingredients and stir well with a whisk to mix.
- SMEAR the end of a cold stick of butter on the hot pan to create small circles of melted butter.
- POUR about 1/4 cup of batter on top of the buttered circles, creating small pancakes. Or make tiny butter circles and hors d’oeuvre-size pancakes.
- STIR the batter often to keep the cornmeal from sinking to the bottom of the bowl.
- FLIP the pancakes when small bubbles appear on the surface.
- SERVE with syrup, fruit or a savory topping such as black bean salsa.
