Cornmeal Pancakes

Taking pancakes to the next level! For fun make tiny butter circles and hors d’oeuvre-size pancakes.

Equipment: Griddle or non-stick pan
Yield: 12-15 pancakes (3 cups of batter)
  • 1 cup buttermilk (use 1 cup of water if using buttermilk powder)*
  • 1/3 cup oil
  • 2 eggs 
  • 1-3/4 cups cornmeal
  • 3/4 teaspoon salt
  • 1/2 teaspoon soda
  • 1/4 cup sugar
  • 1/3 cup flour
  • *4 Tablespoons buttermilk powder
  • Part of a stick of cold butter to flavor the pan
  • HEAT a griddle or non-stick pan.
  • COMBINE the water or buttermilk, oil and eggs in a small bowl. In a larger bowl combine the remaining ingredients.
  • ADD the wet ingredients to the dry ingredients and stir well with a whisk to mix.
  • SMEAR the end of a cold stick of butter on the hot pan to create small circles of melted butter.
  • POUR about 1/4 cup of batter on top of the buttered circles, creating small pancakes. Or make tiny butter circles and hors d’oeuvre-size pancakes.
  • STIR the batter often to keep the cornmeal from sinking to the bottom of the bowl.
  • FLIP the pancakes when small bubbles appear on the surface.
  • SERVE with syrup, fruit or a savory topping such as black bean salsa.
