Banana Chip Waffles

Use a powerful blender to mix up these whole wheat babies. No need for butter or syrup, just pick ’em up and eat ’em.

Yield: 4 waffles

  • 1 cup whole wheat kernels
  • 1 cup milk
  • 1/4 cup vegetable or canola oil
  • 2 eggs
  • 2 Tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 small ripe bananas (or 1 large)
  • 1/2 cup raw oats (quick or regular)
  • 1/2 cup chocolate chips
  1. COAT the plates of the waffle iron with non-stick cooking spray. Preheat the waffle iron.
  2. ADD milk and wheat to the blender jar. Grind wheat and milk together until it becomes mostly smooth–beginning on low and increasing the speed to high. This is noisy and will take a few minutes.
  3. STOP the blender and add 2 eggs, 1/4 cup oil, 2 Tablespoons sugar, 2 teaspoons baking soda and 1/2 teaspoon salt. Blend to combine. Remove blender jar from the base and set aside.
  4. MASH the bananas. Measure 1/2 cup each of oats and chocolate chips.
  5. ADD the bananas, oats and chocolate chips to the blender jar. Stir by hand to incorporate the ingredients–it’s okay if some of the chocolate chips melt because of the heat created while blending the wheat.
  6. MEASURE about 1 cup of batter on to the hot waffle iron. Cook until golden brown. Repeat. Spraying the waffle plates each time.

Note:

If you’re in a hurry, don’t have wheat or a powerful blender, simply add mashed banana, chocolate chips and oats to any pancake or waffle batter (mix or scratch).
